CABBAGE AND MEATBALL VEGETABLE SOUP







CABBAGE AND MEATBALL VEGETABLE SOUP ....another great meatballs recipe....its recommended ! Nice soup !

INGREDIENTS
MEATBALLS:
  • 1 lb. ground beef
  • 2 tbsp. rice, uncooked
  • 1/2 onion, chopped
  • 1 egg
  • Salt & pepper to taste
Mix ingredients in medium bowl. Form into meatballs. Set aside.

SOUP:
  • 1 med. cabbage, sliced
  • 3 carrots, sliced
  • 1 potato, diced into sm. pieces
  • 1 sm. onion, sliced
  • 3 c. fresh or frozen string beans
  • 1/2 (16 oz.) can corn or frozen
  • 3 cans tomato soup mixed in equal parts of water
  • Salt & pepper to taste
INSTRUCTIONS
Place all ingredients, including meatballs, into a large pot. Bring to boil on medium heat. Stir occasionally. Reduce to low heat and simmer 45 minutes, stirring occasionally. The meatballs recipe of soup is ready to serve...enjoy it ! Bon apetit !

BURGUNDY MEATBALLS ....another amazing meatballs recipe ...try it ! Nice one !

INGREDIENTS
MEATBALLS:
  • 1 lb. ground beef
  • 1/2 tsp. salt
  • 1/2 c. quick or old fashioned oats, uncooked
  • 1/4 tsp. thyme leaves, crushed
  • 1 egg
  • 1 tbsp. vegetable oil
  • 2 1/2 tbsp. burgundy wine
  • 7-8 lg. fresh mushrooms, sliced

Combine all ingredients, except oil; mix well. Shape into walnut size meatballs. Brown in oil in large skillet. Remove when browned. Saute mushroom slices slightly and remove.

SAUCE:
  • 2 tbsp. cornstarch
  • 1 c. plus 2 tbsp. water
  • 1/2 c. burgundy wine
  • 2 bouillon cubes (beef)
INSTRUCTIONS
Combine cornstarch and 2 tablespoons water, mixing well. Combine with remaining sauce ingredients in large skillet. Bring to a boil, stirring constantly, until bouillon dissolves. Return meatballs and mushrooms to skillet. Cover; simmer over medium heat about 10 minutes or until meatballs reach desired doneness. Serve over parslied, buttered noodles or rice....hmmm..great meatballs recipe at your service...bon apetit ! Enjoy !

INGREDIENTS
  • 1 c. dry pinto beans
  • 4 c. water
  • 1/2 tsp. salt
  • 3 beef bouillon cubes
  • 1/2 c. onions
  • Sprinkle of garlic salt
  • 1/2 c. sliced celery
  • 1/2 c. julienne carrots
  • 1 (7 oz.) can stewed tomatoes
  • 1 dozen meatballs (recipe follows)
  • 3/4 c. cabbage, shredded
MEATBALLS:
  • 1/2 lb. ground beef
  • 1/8 c. minced onion
  • 1 tsp. chopped parsley
  • 1 egg white
  • 1/8 c. bread crumbs
  • 1/16 tsp. pepper
  • 1/4 tsp. oregano

INSTRUCTIONS
Combine pinto beans and water; soak overnight. Add salt, bouillon cubes, onions, and garlic salt. Cover and simmer for 1 1/2 hours or until beans are nearly tender. Add celery, carrots, tomatoes, and meatballs. Simmer for 25 minutes. Add cabbage, shredded. Cook for 5 minutes more. Season with salt and pepper. Sprinkle with parsley.
Meatballs: Combine and shape into 1 dozen meatballs. Brown in 1 teaspoon oil. Drain well. The meatballs recipe is ready to serve....enjoy the soup ! Amazing !

INGREDIENTS
  • 6 tbsp. brown sugar
  • 1/2 c. catsup
  • 1/4 tsp. nutmeg
  • 2 tsp. dry mustard
MEATBALLS:
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 2 eggs
  • 1 1/2 c. seasoned dry bread crumbs
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 2 tbsp. finely chopped onion

INSTRUCTIONS
Combine sauce ingredients in a small bowl; set aside. Combine the meats, eggs, crumbs, salt, pepper, onion and half of sauce; mix gently until all ingredients are blended. Shape mixture into 12 balls and place in 3 inch deep muffin pans. Make a small indentation in each ball and fill with remaining sauce. INGREDIENTS
MEATBALLS:

  • 3 lb. lean ground beef
  • 1 1/3 c. fine dry bread crumbs
  • 2 tsp. seasoned salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. pepper
  • 2 tsp. Worcestershire sauce
  • 1 sm. onion, chopped
  • 2 eggs
  • 2 tbsp. oil
SAUCE:
  • 18 oz. bottle (1 3/4 c.) Hickory Smoked barbecue sauce
  • 3 tbsp. firmly packed brown sugar
  • 2 tsp. Worcestershire sauce
  • 24 hard rolls or sandwich buns
INSTRUCTIONS
In large bowl, combine ground beef, bread crumbs, seasoned salt, garlic powder, pepper, Worcestershire sauce, onion and eggs; mix well. Using 1 heaping teaspoonful for each, shape meat mixture into balls. In large skillet, brown meatballs in oil; drain. Place meatballs in slow cooker or ungreased 13 x 9 inch pan (3 quart) baking dish.
In medium bowl, combine all sauce ingredients; blend well. Pour overmeatballs; stir gently. Cook slowly in slow cooker until thoroughlyheated, 1 to 1 1/2 hours, or bake covered in baking dish at 325 degrees for about 45 minutes. To serve, spoon about 4 meatballs to each roll or bun. SAUCE:
  • 2 c. ketchup
  • 1 c. brown sugar
  • 1/2 c. chopped onion
  • 1 sm. can tomato sauce
  • 1 tsp. garlic powder
  • 3 tbsp. liquid smoke

INSTRUCTIONS
MEATBALLS: Mix all above meatball ingredients and shape into ice cream-ball sized meatballs. Place in 9 x 13 inch or large pan.SAUCE: Mix all sauce ingredients together with a spoon and pour over meatballs. Bake 1 hour at 350 degrees. The meatballs recipe is ready...enjoy it ! Great taste !

  • 1 can cream of chicken soup
  • 1 can water

INGREDIENTS
  • 1 lg. onion, chopped
  • 2 cloves garlic, minced or mashed
  • 1 1/2 tsp. ground cumin
  • 1 tbsp. salad oil
  • 1 can (about 14 oz.) chopped tomatoes
  • 2 1/2 qt. regular strength beef broth
  • Meatballs (recipe follows)
  • 1/4 c. chopped fresh cilantro
  • 1 or 2 limes, cut into wedges
  • 3/4 c. uncooked white rice

INSTRUCTIONS
In a 5 to 6 quart pan on medium heat, combine onion, garlic, cumin and oil. Stir often until onion is golden, 10 to 15 minutes. Add tomatoes and broth. Cover and bring to boiling on high heat. Add meatballs and rice. Simmer gently, uncovered 25 to 30 minutes. Stir cilantro into soup. Ladle soup into bowls and squeeze in lime to taste. Makes 3 1/2 quarts. 6 to 8 servings.

INGREDIENTS
MEATBALLS:
  • 3/4 - 1 lb. ground pork
  • 3/4 - 1 lb. ground beef
  • 1 lg. egg
  • 1 c. bread crumbs (fine ground & seasoned)
  • 2 tsp. salt
  • 1/2 tsp. black pepper
  • 2 tbsp. Parmesan cheese
Mix all above ingredients in a large bowl and form into meatballs, sized according to your choice. Brown in large frying pan with 1 teaspoon olive oil. While meatballs are browning start the sauce.

SAUCE:
  • 2 tbsp. olive oil
  • 2 cloves garlic
  • 2 (28 oz.) cans crushed tomatoes
  • 1 (12 oz.) can tomato paste
  • 1 (15 oz.) can tomato sauce
  • 1 tbsp. sugar
  • 2 tsp. salt
  • 1 tbsp. basil
  • 1 tsp. oregano
  • 1 bay leaf
Meatballs Recipe INSTRUCTIONS
Use a pot with at least a 6 quart capacity.
Saute olive oil and chopped garlic on low heat. When garlic starts to brown add tomatoes, sauce and paste, stirring well. Add the next 5 ingredients stirring well. After the meatballs have been browned add to sauce being careful to keep excess oil and grease from getting into the sauce. Cook for 1 1/2 hours at lowest heat possible, stirring occasionally and tasting. Add seasoning according to your taste.

PASTA: Use the following formula for all adults. 6 oz. pasta per adult

4 oz. pasta per family member if small children will be eatingFill a pot with water, add one to two tablespoons olive oil and at least 1 teaspoon salt. Bring to a boil, add pasta and lower heat slightly. Cook until desired tenderness is achieved...and the meatballs recipe is ready to serve...enjoy it !

  • 1 454-g package of tortellini (cheese)
  • 1 lb Italian meatballs
  • 1 cup salsa
  • 3 cups frozen vegetables
INSTRUCTIONS
Bring broth and water to a boil in a large saucepan. Add frozen tortellini and cook for 10 minutes. Add meatballs and salsa, then bring to a boil and cook for 15 minutes. Stir in frozen vegetables

  • 2 lbs pork, veal, and ground beef mixture
  • 2 eggs
  • garlic powder
  • 1/4 cup fresh parsley, minced
  • 1 cup Italian bread crumbs
  • salt
  • a little bit of milk
Sauce:
  • 2 cans tomoato sauce
  • 2 cans tomato puree
  • 2 crushed tomatoes
  • 1 teaspoon olive oil
A Sprinkle of:
  • oregano
  • onion powder
  • garlic powder
  • Parmesan cheese
INSTRUCTIONS
Combine all ingredients for meatballs in a large bowl. Form into meatballs. Fry them until brown in a skillet with 1/4" olive oil and several whole cloves fresh garlic, to flavor the oil.

Meatballs:
  • 2 lbs. lean ground beef (can use 1/2 beef and 1/2 turkey)
  • 1 package Lipton Beefy Onion Soup Mix
  • 1 cup flavored bread crumbs
  • 3 eggs
  • garlic powder, salt & pepper to taste.
INSTRUCTIONS
Mix together meatball ingredients and shape into small meatballs and place into a good size baking pan.

INGREDIENTS
Sweet and Sour Sauce:
  • 1 bottle Heinz chili sauce
  • 1 bottle of water (use chili sauce bottle)
  • 1/2-3/4 cup brown sugar
  • 1 can whole berry cranberry sauce
  • 1/4 c. red wine (optional)
INSTRUCTIONS
Mix together ingredients for sweet & sour sauce in a sauce pan and simmer until well blended.
Pour sweet and sour sauce over meatballs. Bake 2 1/2 hours at 350 degrees turning meatballs every half hour.

SWEET AND SOUR MEATBALLS

INGREDIENTS
Batter Mixture:
  • 2 eggs
  • 3 tablespoons flour
  • salt and pepper
Meatballs and Sauce:
  • 1 1/2 pounds ground beef
  • 3/4 cup oil (for frying)
  • 1 cup chicken bouillon
  • 3 large green peppers, diced
  • 1/2 large can pineapple chunks
  • 1/2 cup Triple Sec or Cointreau
  • 2 tablespoons cornstarch
  • 2 tablespoons soy sauce
  • 1 teaspoon Monosodium Glutamate
  • 1/2 cup vinegar
  • 1/2 cup pineapple juice
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • freshly ground black pepper

INSTRUCTIONS
Shape ground beef into about 60 small meatballs.
Mix eggs, flour, salt and pepper together. Roll meatballs in batter mixture and fry in hot oil until nicely browned. Remove meatballs from skillet and set aside. Discard all but 1 1/2 Tbsp. of oil from skillet. Add bouillon, diced green pepper and pineapple chunks.

Cover skillet and cook at medium heat setting for 10 minutes. Combine remaining ingredients and add to skillet, stirring constantly until mixture comes to a boil and thickens.

Add meatballs and simmer for 15 minutes.Season to taste and the meatballs recipe is ready to serve...enjoy the meal ! Nice !

CHINESE MEATBALL SOUP

INGREDIENTS
MEATBALLS:

  • 1 pound ground beef, chuck or sirloin, lean
  • 3/4 cup oatmeal or bread crumbs
  • 2 tablespoons soy sauce
  • 1 tablespoon dry sherry
  • 2 teaspoons sesame oil
  • 1 1/2 teaspoons fresh ginger, minced finely
  • 1/2 teaspoon black pepper
  • 1/4 cup chicken broth
  • 1 egg
SOUP:
  • 2 large cans (14 ounce) chicken broth
  • 1 cup water
  • 1 package (6 ounce) frozen snow pea pods
  • 1/2 pound baby carrots, cut in half
  • 1 1/2 cups fresh or canned bean sprouts
  • 1/2 cup green onions, thinly sliced
  • 1 1/2" cube fresh ginger, finely grated
  • 1 clove garlic, finely minced
  • peanut or olive oil for roasting

INSTRUCTIONS
Combine soup ingredients in large saucepan over low heat to simmer (reserve snow pea pods and carrots for broiling or stir frying).Prepare meatballs: stir ingredients together, shape into 1 1/4" meatballs and place on lightly oiled broiler pan. Spray lightly with an olive oil spray if you used very lean meat. Broil until nicely browned or bake at 400° 15 minutes.

To roast the baby carrots, cut carrots in half, lengthwise. Rub in one or 2 tablespoons of olive or peanut oil, and sprinkle between the meatballs on the broiler pan. Do the same with the thawed snow peas.

Check while broiling, and remove carrots, snow peas, and meatballs as they begin to brown. Drain on paper towels briefly and add to soup. If you wish to skip this step, you may
aternatively brown the Meatballs, snow peas, and carrots in a wok.

With all ingredients now in soup, simmer over low heat 15 to 20 minutes and season to taste with salt, pepper, a pinch of Chinese Red Pepper, if desired, and a dash of soy sauce.
